Last night we had this for dinner.
Asian Beef Noodles
1 pound lean boneless beef top round steak, cut into 1/4-inch strips
3 garlic cloves, pressed
2 small pieces (1/2-inch) fresh ginger root, peeled and finely chopped
2 cups water
2 packages (3 ounces each) beef-flavor ramen noodles
3 cups broccoli florets
2 carrots, sliced
2 green onions, sliced
1. Heat skillet over medium heat until hot. Lightly spray with nonstick cooking spray. Stir-fry beef, half at a time, 3-4 minutes. Remove beef from skillet; set aside.
2. Add garlic and ginger to skillet; stir-fry for 30 seconds. Add water; bring to a boil. Add noodles, broken into pieces, broccoli, carrots and seasoning packets from ramen noodles.
3. Bring to a boil; reduce heat. Simmer 3 minutes or until noodles are tender adn most of the liquid is absorbed. Return beef to skillet; heat through. Sprinkle with green onions.
Makes 6 servings.

(*For added flavor cook the meat in Kraft Asian Toasted Sesame dressing. I love this stuff. Of course this will change the nutritional info. I also added extra vegetables.)
It turned out pretty tasty and was fairly easy to make. My kids really enjoyed it as well.

Last night at around 2:30, I was awakened by a thunder storm. We had pretty heavy rain and lots of lightning and thunder. As I was attempting to fall back asleep I was thinking about dinner. I was thinking how the meat was so tender and easy to chew, almost like it wasn't there. Then I remembered, the meat was still sitting on a plate in my microwave. You see, I remembered this part: Remove beef from skillet; set aside; but I forgot this part: Return beef to skillet. Doh!

I don't think that would ever happen to me. Leaving out the meat part, I love meat! I might have "forgotten" the vegetables though! Ha!Ha! I dream about food too! I have left out key ingredients to food on accident before too.
