Slow Cooking Thursday - Creamy Italian Chicken and Rice


This is my first time participating in Slow Cooking Thursday sponsored by Sandra. This is one of our favorite crock pot dinners.

Creamy Italian Chicken and Rice
3 or 4 chicken breasts
1 pkg. dry Italian dressing mix
1/2 cube margarine
1 (4 oz.) pkg. cream cheese
1 can cream of chicken soup
Rice

Put chicken, margarine and dressing into crock-pot. Cook on high 3 hours. Take chicken out and chunk. Return to pot. Cut cream cheese into chunks and put on top of chicken. Pour in soup diluted with 1/2 can milk. Stir together and cook another 45 minutes to 1 hour. Serve over rice.

*You can use minute rice. Just add rice when you add cream cheese and soup. Increase milk to 1 full can.

I was going to post almost this exact recipe today! It's one of our favorites too. Except I will admit, I make it with three blocks of cream cheese and three cans of soup. We LOVE the sauce, and I make egg noodles to eat it with. :)

Amanda~ (this is in response to your comment you left on my blog regarding my need of new recipes) It is funny you should tell me about this recipe!....I found this post of yours through Mary's blog and have already tried it! I love it and so does my family....I have made a few times already. Have you tried adding anything to it...I added a can of cut green beans and it was great that way too!
