I wish I could say that I've been on some exciting trip or that I have had lots of exciting things going on in my life, but I can't. Life has been just as busy and chaotic as ever, but not too bad. The main reason I haven't been blogging much lately is that I've been dealing with my double "D" problem again. For those of you that know me, you know that I am not referring to my bra size. Curious? Go here to read what I am talking about. Yes Kira, even I have bad days. It has been awhile since the blues have hit me this hard. I am not certain what triggered it this time, but I am really tired of it. So I am choosing to be positive rather than dwell on the negative.
Here are a few positive things that have been going on since the last time I wrote:
- I saw Twilight again. I liked it much better the second time. I still think that it could have been so much better, but I did decide that it wasn't all bad. I even bought the soundtrack and have enjoyed listening to it.
- I survived 21 days without goodies. My very sweet friend Lani brought me over a delicious pumpkin roll to help me celebrate my achievement. Thanks Lani! :)
- Speaking of Lani, she has been great motivation to get me to the gym more regularly. She joined the same gym I go to a couple of months ago. It has been fun to see a friendly face and to have someone to call me a slacker when I don't show up. ;) Oh, and someone to share in my pain as we both attend the body
torturepump class once a week. Thanks again Lani! :) - We had a nice, relaxing Thanksgiving. We spent it here in SD with Scott's brother Roy and his family. It was nice not to have to travel anywhere. We've driven through too many blizzards in Wyoming in the middle of the winter that we didn't even consider going anywhere this year.
- Our chickens are laying eggs like crazy. We started out with only getting one or two every other day. They have slowly been laying more since Thanksgiving. Today we got 13! I think it is time to start looking for people to buy them. My kids have been enjoying hard boiled eggs as an after school snack, but that will only last for so long. If anyone has any fun recipes for eggs please send them my way. :)
- For breakfast today we had egg-in-the-whole-in-the-bread. This was something Scott had a lot as a kid and our kids love it. Basically you take a piece of bread and cut a hole in the middle (a small cookie cutter works great). Put the bread in a frying pan or on a griddle and then crack an egg and drop it in the hole. This is really yummy with cinnamon bread. Maybe we'll have German pancakes this weekend. mmmmm....

I'm so glad you are okay and you are alive... I was getting really worried about you! Hopefully things will turn around soon :) Wouldn't it be nice if the double D you were referring to was your bra size, and mine too???
Body Pump is torture, isn't it? Don't you love how much stronger you feel though? I haven't gone in a while and I feel so flabby and chubby.
We just found out that we are moving to Tucson, AZ. Don't you guys have family in AZ?

I hope you get through the...what'd you call it? The D word? Anyway, ben there enough to know, and the holidays sure don't help, huh? Feel better soon and call anytime you need a hand or sitter--anything.
So happy to hear about your chicks.--mine actually started after the weather turned sour--not like chickens at all. Remember--I have people for purcahse. But also...did you know you can freeze them? Crack and freeze and use for baking or whatever later. Also, they're good forever--like 8..10..12 (never tried this), but I'm sure you don;t have space for storing anyway?

Amanda, I'm so glad to see a post from you! I missed you so much!!! How fun that you got to stay home for Thanksgiving and that you're getting so many eggs.
I'll have to see if I have any good egg recipes. We had that egg/toast thing when I was a kid too. My Dad called them Tijuana Taxis. And I have absolutely no idea why! LOL! :)

How fun to have all those eggs. (I'm such a city girl--although I always wanted to be Laura Ingalls ; ) Let's just hope when you start selling you don't run into a Mrs. Olson.

Here is a favorite egg breakfast around our house, my dad made these for us when we were kids. It is similar to your egg in toast recipe (which my dad also makes. He is big into breakfast.) We call it Camel Eyes:
Buy some pilsbury refridgerator rolls. Not the big can, but the smaller size that comes in a set of four cans. Open one can of rolls, and flatten each roll a little with your hands.
Lay those little flat rolls in a muffin pan. Each one should line one muffin cup. Then crack an egg into each dough lined cup.
Bake at 450 for about 20 minutes. You'll know the eggs are done when the white part doesn't wiggle when you move the pan.
The egg/bread cup kind of looks like a big eye ball. That's why we call them Camel Eyes. My directions make this sound much more complicated then it is. My kids love these and can each eat 2 or more.
I get problems with the two D's quite often, especially this time of the year. It helps to focus on my kids and making it a good Holiday season for them.
Exercise and healthy eating also help (although sometimes a lot of chocolate feels like it will help more than being healthy).

I've been wondering where you have been! Sorry you've been struggling. I struggle with those same things, too, from time to time and it sucks. Sounds like you have a great attitude and I'm sure that going to the gym with your friend will help, too.
We eat lots of quiche in our house. Super yummy and easy and if you make it without the crust throw in tons of veggies, it's not so bad for you!

We call the eggs and toast things Bird in a Nest or Chicken in a basket. Deffinently a favorite of our families. Its fun to hear what other people call it.
