Totally yummy Tuesday

Today has been officially declared as

TOTALLY YUMMY TUESDAY

If you like, please feel free to share a recipe that is totally yummy. My contribution for today is:

Cowboy Cookies*
1 cup shortening (butter flavor Crisco is yummy)
1 cup brown sugar
1 cup white sugar
2 eggs
2 tsp vanilla
1 1/2 to 2 cups flour
1 tsp salt
1 tsp soda
1/2 tsp baking powder
2 cups oatmeal (or more if the dough seems too wet; should be old fashioned kind)
1 cup chopped walnuts
1 cup coconut (not the flaked kind)
1 pkg Nestle's chocolate hunks (chocolate chips work good too)

Cream shortening and sugars. Add eggs, both at the same time. Beat well. Add soda, salt, baking powder to flour, then add it all to creamed mixture. Add vanilla. Beating by hand, add nuts, oatmeal, coconut, and chocolate. Drop by teaspoonsful onto a greased (or Teflon) baking sheet. Bake at 350 degrees for 12 minutes. Makes a lot of cookies, depending on how big you want them.

Danish Dessert Cake

A friend of mine gave me a similar recipe to this one. It was a little vague so I did some checking on-line and found this recipe which is very similar, but with better directions. I made it in my jelly roll pan. I was not able to find Danish Dessert at walmart, so I just bought Litehouse Strawberry glaze instead. This cake is so yummy. Ignore the nutritional information. Who really cares how many calories it has anyway!

Yummy recipes and such a fun idea! O.K. Amanda, you said that calories don't count so here we go!

I don't know the name of this recipe:

1 bag mint Oreos
1 (8 oz.) pkg. Cream Cheese
Almond Bark (chocolate for dipping.

Crush Oreos in blender. Mix with cream cheese until well blended Roll into 1" balls and freeze until firm. Melt chocolate almond bark in double boiler until at dipping consistency. Dip frozen balls and cover completely. Freeze again and serve cold from refrigerator.

These things are little pieces of heaven! :D

Anything with two kinds of sugar and oatmeal are my favorites. Since I am dieting right now, I'll just make myself a little bookmark of this recipe for a future date. :-)

I just want to know if you liked Almost Sisters.
And what is not flaked coconut? Are you talking about fresh coconut? The dried kind that is in trail mix?

elizabeth: It was okay. I haven't read the next book yet. Honestly I didn't notice the 'not flaked coconut' part until today when I copied the recipe. I just used regular coconut in the baking aisle. Whatever that is. You can tell I'm a skilled baker!

Cowboy cookies! Those sound so good. I had some very similar but also with corn flakes. Sounds odd, but they were the best, hugest cowboy cookies ever. Wait, I think they were called buffalo chip cookies. hmmm. I will have to look for the recipe...
