Snow Day; exercise and a yummy recipe

We woke up this morning to a thick blanket of snow (about 6 inches) on the ground. I spent most of the morning trying to ascertain whether or not school would be canceled or at least have a 2 hour late start which is not uncommon with lesser amounts of snow. The radio stations and TV stations were not saying anything either way so I assumed that that meant school would be normal today. I was really surprised while driving the kids to school that there wasn't a two hour late start. The roads were pretty icky.

I wasn't sure if I should go to the gym or not, but figured if I didn't I wouldn't exercise at home so we went. I was too late for the kickboxing class so I did the treadmill for 25 minutes and the elliptical for 15 minutes. I felt like it was a pretty good workout. I haven't kept up with updating my blog on my exercise goals. I have been going to the gym every Monday, Wednesday and Friday.
Monday - Treadmill for 20 minutes and then upper body pump for 30 minutes.
Wednesday - body pump, including lower body for 1 hour
Friday - Kickboxing for 45 minutes

Sometimes I do a little exercising at home on Tuesday and Thursday. I did kickboxing at home on Tuesday followed by Pilates.

One of my kids broke our scale a few months ago so I really wasn't sure where I was at weight wise. I had an idea, but wasn't sure. Technically I am not considered overweight for my height, but that doesn't mean I like how my body looks. I'd like to weigh about 15 pounds less, but I am more concerned with losing inches. I figure the weight will come with it or turn in to muscle. On Monday I discovered a scale in the bathroom at the gym so I got on it. I was pleasantly surprised to find out where I was at. I weighed about 5 pounds less then what I expected to.

We had this for dinner the other night and I thought I would share it with my blog friends. It is so easy and so tasty. I have cooked it in the oven and in the crock pot.

Russian Chicken

4 to 6 skinless boneless chicken breasts
1 package onion soup mix
1 small bottle Russian dressing
1 small jar Apricot Preserves (I have also used Peach jam and Apricot preserves with Pineapples.)

Place chicken in greased 13x9 inch baking dish. Mix remaining ingredients together and pour over chicken. Bake at 350 degrees for 1 hour. I like to take the chicken out and cut it into bite size pieces and then mix it back into the sauce, but you can leave it whole if you wish. Serve over rice.

Crock Pot:
Use frozen chicken breasts. Prepare as above and cook it on low for about 6 hours. This works great for a Sunday dinner.

That really is a good recipe - hubby brought it home from his place of work (they had a cafeteria) and I was hooked from the first bite. Plus it's so easy!!! :)

How cool is that to step on the scale and see that you weigh less than you thought you would. It sounds like you're doing great with your exercise program.

I love that Russian Chicken recipe! I've also heard it referred to as Chicken in Duck Sauce, but that honestly doesn't sound as good as it really tastes. I like the name Russian Chicken better. Maybe I'll make some for dinner. Yum!!! :)

I was in a "I'm not exercising for nothing'" stage, but now I'm actually "thinking about tit, which I wouldn’t even consider in the past. Reading your posts about exercising keep encouraging me, let's see if the thought can actually materialize before I turn 60.

Maybe I’ll try the recipe next week, when DH is back and I ‘have’ to cook.

Suzanne, yes I was thrilled to get on the scale and weigh less than I expected. I agree the Duck sauce doesn't sound near as appetizing as Russian Chicken.

NCS, I have felt that way before, not wanting to exercise, wondering what's the point. But I have really felt good lately. You can do it!! Before your 60. LOL

Andrea, I grew up in Utah and snow days (school being canceled) were almost unheard of. But here, they don't seem to get the snow plows out as quick or something so it is not uncommon to have at least a 2 hour late start for snowy days.

Amanda - I remember my sister in law fixing chicken like that a-way back when we were first married. I always wondered how to fix it. I'm not doing a lot of real cooking this month, but I will have to check back for the recipe in a couple months.

I am totally impressed with your workouts. I am a slacker and never exercised today. But I will get in my long run tomorrow even if I have to do it in the dark.

You look great - and huzza huzza for weighing less than you thought!

ps I was up at 6:30 watching the news. I was sure they were going to delay school. They never said anything, so I went upstairs and I could see that all the busses on the hill near our house were heading out to get kids. So I got the kids up. Bummer.

In reality, I don't think much about those, there's no magic that could help me since I am a barely an "A".

I'm SO glad I don't live where it snows! I've seen that recipe before but never tried it. Maybe I'll have to sometime. Here's my favorite (really easy!) chicken recipe for the crockpot:

Crockpot Cranberry Chicken

4-12 skinless chicken pieces, bone in (depending on size; dark meat is best, the original called for thighs, I buy in bulk, skin them, individually wrap in waxed paper, put in a freezer bag and freeze for later use, nice and cheap)
1 onion, quartered (although when I was pregnant and had an aversion I omitted it and it turned out just fine)
1 can whole-berry cranberry sauce
1 tsp. prepared mustard (I use spicy brown)
1 tsp. apple cider vinegar (can substitute white)
1 Tbsp. beef boullion powder (I actually use the granules, they don't clump; if you only have cubes, the equivalent is 3 cubes, crushed)

Place onion in the bottom of the crockpot. Place chicken on top of onion. Mix all other ingredients and pour over chicken, making sure to get some on each piece. Cook 3 1/2 to 4 hours on High or 5 1/2 to 7 on Low. Serve with rice, potatoes, or bread and a green salad for an easy, delicious meal!

Mmm...yummy! Neil's grandma makes that, except she throws in a can of cranberries as well. Delish! Thanks for reminding me about it - now I have something to put on next week's meal plan.

After attending Elizabeth W's Cooking School for Wayward Girls, I am a little more confident in my abilities to produce a meal that people will eat. I just might try this Russian Chicken, just as long as it does not involve standing in a bread line.

NCS, Did you try Wal-mart? I couldn't find it in Rapid City when we first moved here. Walmart eventually started carrying it. Sorry, I hope you can find it somewhere. You can make your own, but it is not quite the same.
