Zucchini



I can never remember how to spell that word, so from here on out zucchini will be referred to as Z. Anyway, we are experiencing an OVERLOAD of Z at our house. We planted our first garden last year and I froze Z planning on doing lots of baking during the winter. I did even did an online search of recipes for Z and found many to use up our abundant Z supply. Well....this spring when I was cleaning out our freezer I threw out most of that Z that I spent so much time sheredding, measuring, and placing in tiny ziploc baggies only to occupy space in my freezer for nine months. I begged Scott not to plant so much Z this year, but "We have to plant at least two plants in case one dies". That is the problem with Z though. It is SO easy to grow. And one Z can provide MANY bags of shredded Z. We are not talking about the small Z you can buy at the grocery store, this Z is more like the size of a baseball bat. Not that I am complaining. I sit here typing with the fragrant smell of Z bread baking in the oven. So I am trying to give away as much Z as I can to our friends and neighbors. I also thought that maybe I should make Z bread and freeze it, then maybe I would be more likely to use it. I also found a yummy recipe for Chocolate Z cake. Doesn't that sound good? Anyway, did you want to come over for dinner tonight, guess what is on the menu? Z casserole.

We are growing more than just Z, here is a couple of pictures of our garden. It is really a lot of fun, not to mention we are enjoying all the yummy benefits of having fresh produce in our back yard.

We are growing tomatoes, cucumbers, Z squash, yellow squash, butternut squash, carrots, beets, green beans, jalapeno peppers, cantaloupe, watermelon, brussel sprouts (Scott's idea, not mine), green onions, and pumpkins. Unfortunately our pumpkins did not do so well this year.
